This is a delicious twist on pizza! Start with a package of chicken thighs. Place in a shallow baking pan and season with salt, pepper, and a generous shaking of Creole seasoning. Bake at 400 for 40 minutes.
After 40 minutes, add one teaspoon of Dinosaur BBQ sauce to each thigh. Back in the oven for another 15 minutes.
Cool and remove meat from bones. Discard skin and bones. Shred meat and set aside.
Line two baking sheets or pizza trays with pizza dough. Spread each crust with Dinosaur BBQ sauce, divide the chicken between the two pizzas, add one thinly sliced red onion and one package of pre-cooked bacon chopped.
Sprinkle each pizza with 2 cups of finely shredded cheddar cheese.
Bake at 400 degrees for 20-25 minutes or until crust is golden on bottom and edges.
We had this during the Superbowl last weekend. Huge hit!
